Description:

The R H Forschner by Victorinox Paring Knife features high carbon, stainless steel blade, hand finished at Victorinox in Switzerland by skilled craftsmen. A special tempering process is used to produce an edge that can be resharpened over and over again, so the knife can keep its original sharpness throughout the entire life of the blade. Victorinox handles are ergonomically designed to minimize wrist tension. They provide a natural fit. A good heft and comfortable, positive grip are indications of a well-made knife. A sure-grip handle with a finger guard is valuable feature since the handle inevitably gets greasy, wet, or both. Although cutlery steel is naturally sanitary, materials and construction details of the handle minimize crevices what would offer hospitality to bacteria.

In the past, these were great knives: inexpensive, comfortable to hold, and long-lasting. However, the handles have been redesigned at least twice and have become much less substantial and comfortable (shorter and more concave) with each revision. They are, however, as sharp as before, arriving sharp and staying sharp.

We have never been the type to get those really nice knife block sets. Most of our knives were wedding presents that came free when you ordered from a mail-order meat company. However, we felt we needed a nice paring knife. So we did our research and thsi one was VERY affordable and got great reviews. It made a HUGE difference in food prep. Suddenly we can quickly slice all our fresh fruits and vegetables quickly and easily. I even did the sheet of paper test (you try to cut a sheet of paper with the knife) and it worked. Only issue is I was so used to using dull knives that I accidentally knicked my finger once. This knife is great. If you are like us and build your knife collection one knife at a time, this is the one you need for paring. Highly recommended.

This knife is sharp enough for a surgeon, but thankfully (for everyone) I will be using this only as intended. The knife is small, light but well balanced and most importantly, dishwasher safe. Considering the price, I would much rather have Victorinox Cutlery than many of the more expensive brands (which I have also bought($$$)). The unit was packaged very securely and delivery was exceptional.

I used to be a professional chef (graduate of The Culinary Institute of America in Hyde Park NY). I've used these paring knives for years, and love them. Especially for the cost, you really can't beat them. When I started-out, I thought the most expensive knives would be the best knives. That is SO not true. Victorinox paring knives are SO much better than the "expensive guys". not only due to the cost, but also because they keep an edge. They are so inexpensive, that when people come over. . . and love my paring knife. . . I give them one. You really can't go wrong with this knife.

Most knives become blunt after some months. I have been toiling over a lot of them. Well not any more. I bought this knife recently and am amazed how sharp the knife is. The veggies cut like butter. The knife is a little small for my taste since I am more used to 6inch chef knife. The handle has a good grip for quick cutting. I have already cut my finger so please be careful when you use this knife. It is super sharp. Have fun cooking with this knife.
